Categories without individual items

Is there a way to just use basic categories without entering individual items? I just want to break down the transactions into categories but I don't necessarily want to enter in 1,000s of items that we sell many of them one of a kind. I want to enter a custom price for the items as they sell and just want to categorize the sale.

@TheVintageHamme Absolutely, I have a couple "open" items that do not have a set price.  I use them for Grab-n-Go items that I make for a salad cooler.  I like to change my mind a lot and the price is set when I make the item and labeled.

What I do is set up your categories and then just have 1 item with the same name for each category and do not enter a price.  This will get you the reporting you need with an open button where you just enter the price.  You can skip categories all together if you like and just have the items with no assigned category, but you will need to pull an item report to see sales in each "department".

The only real limitation with an open price button is you can't use those items online to sell anything.
