is there a way of undoing a cancelled invoice?

Once an invoice is cancelled you can't undo it. But you can duplicate it though and then edit/send it to the customer again.
Follow up question: it was not be a new invoice number correct? it Cant be the same invoice number?

Once an invoice is cancelled, you are unable to reverse this action.To duplicate an invoice in Square, go to your invoice list in the Square app or Dashboard, select the invoice you want to copy, tap the three dots (•••) or menu icon, and choose the "Duplicate" option to create a new, editable version with the same details. correct. It won't allow your o use the same invoice number for the invoice ID. You can however edit it to be close something like original 002118 new one 002118-1.
