Why does Square seem to change my sales taxes?

I have run into a problem that I cannot seem to fix.  We charge sales taxes on all of our products except gift cards.  However, we do have customers that are sales tax exempt.  When we take taxes off of the transaction for those customers, we have discovered that square has changed those items sold to being sales tax exempt.  How do I stop Square POS from doing this?

How are you taking the taxes off the items to ring up a tax-exempt sale?  changing the taxes on an item or sale in a transaction won't change it permanently as I have rung up thousands of tax-exempt transactions.

 

 

Edit Taxes at the Time of Sale:
From the Square app, tap Current Sale and tap an item.
Under Taxes, toggle applicable tax rates on or off.
Note: From the Sale screen, you can also tap Tax to view all tax rates applied to the current sale. Tap the red minus icon to remove a tax rate from applicable items within the sale.

I get it.  We toggle it off and after that sale any item that was toggled off will remain sales tax free.  It is completely bizarre.
