Who pays square fee for tips?

I just enabled tips for my employees, and I see I get charged the square fee for tips collected.  Does that come out of their tip when I run payroll or do I eat that cost?

You eat that cost. Anything processed with a card, tips and tax included, will be processed with a fee.
