Unique Craft store which items are different all the time but same category. best way to organize

I have a unique craft store which let's say the item is pens.   I have ones for different occasions and holidays.  But nothing is guaranteed to be the same.

Should I keep under the category pens, and list like Memorial Day with a count rather than each design which always changes?    I'm over thinking this...... LOL

Yes if the bar codes are the same for all designs ( and if the bar code is the same for all designs you might be able to make variations - Christmas variation, Memorial day variation, Easter etc, to help you keep track of what are hot sellers or what you might need to reorder)  You can always add sub categories or different categories next year to change.
