Having an issue with the square terminal, have had a group of customers want to split bill one paid and left others haven't paid leaving me with a non functional register until the others pay, is there a way to accept one payment then accept the rest of the payment at a later date.

I see this is your first post, welcome to the seller community.
The only wat to do this is to manage the bill and split out the items into a new bill and pay that.

But this is quite slow, and also it is item based (ie a leaving guest can't just pay $xxx off the bill)
You'll notice also it mentions when splitting payments it mentions that the transaction must be completed.
This is one of the areas where I think Sqaure really need to pick up their game, either proposed solution is not ideal, especially in the middle of a busy service (I think they need more involvement/feedback from people in the hospo industry before coming up with these 'processes'.

Yep, it's not ideal. We're now in the habit of trying to anticipate if it looks like part of a group is leaving separately and so we split by item on Square For Restaurants. We try to counter the lack of ability to split percentage/person by kicking off with the prompt "what would you like to pay for?".
Terminal really should allow you to park a partially paid bill. I suspect there's something fundamental preventing it, as we've also had a single declined payment and timeout in a split bill invalidate all the other successful payments. "Sorry folks, Bob's card was declined, we need to go back to the start and get you all to pay again...". Goes down a treat 😉
