Item won’t save sales tax

Several of our items have changed and we have no idea why!  Suddenly, the sales tax was turned “off” for several items.  We toggle the tax button to “on”, then save it, close the screen.  When we open the item, the tax indicator is “off”.  Any ideas?

Which items are you seeing that with? I'll try enabling it myself and see if that change is saved.
