Item with multiple options, but not all option combinations are available...how best to do this?

Hello Group!  I have an eCommerce shop for items that I make from reclaimed fabrics, yarns and the like.  I'd like to use multiple options on an offered item, but when I do, it seems I have to have all combinations of the options available which is not reality for my shop. For example, crochet mittens.  They have option sizes of S & L and yarn colors of Red & Green and yarn type of Acrylic & Wool. This creates variants like S, Red, Acrylic - S, Red, Wool - S, Green, Acrylic - S, Green, Wool -  L, Red, Acrylic - L, Green, Acrylic - L, Red, Wool - L, Green, Wool. This is just a small sample of the sizes, colors and types I have available.  However, I do not have all these variations made to sell. Let's say I do not have any Small Red Wool mittens to sell. When I create "Mittens" item with these 3 option groups. They do not seem to work on my online store. Because I do not have Small Red Wool mittens available, the customer cannot choose from the option lists once they choose one time. I have tried adding all the variants when setting up the item...variants I do not offer would show as out of stock, but I still can seem to get this to work on my web store. Any thoughts?  Suggestions?  The work around I do now is list separate items with only one option...Like "Large Wool Mittens" and "Large Acrylic Mittens" and then the customer can choose the yarn color. (For my example here, "Small Acrylic Mittens" would have red and green options for the customer to choose and "Small Wool Mittens" would only have red option.)  This doesn't seem like the right way to display these items.  Thanks for any help.

When adding a variation that you don't currently have in stock, do you 'receive inventory' of 0? 

 

We noticed that the online store can act funny if you do not put in the stock counts for each variation on an item. So even if you don't have any to sell, I would still add a stock level of 0 into the variation.

Let me know if it works! 

 

We've got a few items that have similar lists of variations "large green" "large blue" etc. that start with some of the variations 'sold out' by doing the inventory received as 0. So I know it's doable! We'll get ya there!

I still have trouble with this. I set up red/black check, pink floral and pink flannel for colors and baby & adult medium for size. If I have both sizes available for at least one color choice, it can work. But if baby is only available in pink flannel and adult medium is only available in red/black check and pick floral. It gets stuck after choosing baby & pink flannel.  I can't get back to see/choose the adult medium options.
