How to have dynamic pricing for customized items

We offer laser etched and cut, custom leather hat patches.  These can be nearly any size, in any leather (that we have in stock), with any text and font, and with any graphic(s) that the user wants.  How can we list an item and have the base price as null or empty (not zero as these are not free)?  And how can we tell the customer to send us their specific requirements and we send them a quote back, based on complexity and quantity?

@Groovy_Thread That is a tough one there, you can't list an item without a price on websites.  Have you looked at setting up some type of tier system?  A base price, +add ons as modifiers, and then you could do a volume discount?  My thinking is some type of formulary would be better for your business long term.  Otherwise you could list items, and just keep them out of stock so people could look at them and see and do an inquiry form.
