How to apply a variably priced service at the checkout.

The title of this thread has been edited from the original: how to use a variable price at checkout ?

we have our our restaurant and we do catering with our catering depending on what you order is the price so it has to be entertainable. We have been using a catering option under service item and now it is not working and we cant figure out how to be a price changing item on square.
