I would separate the two libraries first. Service categories in Square/appointments do not always behave like item categories on the Square Online shop, so I would check whether that service is meant to appear in a booking/services section instead of Shop All. If you need it to sell like a normal product, a tiny test item category with one service-equivalent item may tell you whether the website block is filtering out services.
