One of our employees accidentally cleared the gift card instead of swiping it during the checkout process. Even though the gift cards were previously paid for back in November of 2019, will this effect any sort of processing in terms of the purchaser getting money back? This has never happened to us before so we are unsure how to proceed with this process!

So sorry that that happened!
Luckily, as long as the gift card was Cleared and not Refunded (which takes the difficult step of finding & going into the original purchase transaction), then you're good!
Clearing a Gift Card does not return funds, but rather "Poof"s them out of existence.
While it's not the best thing to do, the customer won't be refunded or anything, so it's good in that sense.
Some next steps to think about / follow:
1. Look up that Gift Card and see how much money was still on it before it was cleared - so if you needed more money from the customer to complete that transaction, or if the customer still had money left on the gift card after the transaction, that could be rectified.
2. Complete the new transaction, either by reloading the gift card with the amount that was on it with a 100% discount, or by just hitting "other" or "other gift card" as a payment method
