Eliminate 'uncategorized' option

Is there any way to eliminate the 'uncategorized' option? No matter how often I tell my staff to choose from among the categories listed, we still get a large number of 'uncategorized' sales which we would prefer to avoid. If there is some way to achieve this systemically that will hedge against human error / refusal to follow instructions.

Unfortunately there's not a way to remove this because it's not really an option. It occurs when an employee enters the amount of a sale instead of selecting an item from the item library.
