Is there a way to disable delivery on certain days? eg. public holidays?

Yes, you can manually mark both pickup and delivery as unavailable on specific dates by setting a restricted date. Just keep in mind that this will disable both options for the selected date(s).
If you only want to disable one option—delivery, in this case—you can log into your Square Dashboard and toggle delivery OFF the night before or at the start of the day, then toggle it back ON the next day.
To find these settings, go to your Square Dashboard and navigate to:
Settings > Account & Settings > Fulfilment Methods > Online Pickup & Delivery.
