I had a customer today ask me to please not send the receipt to her email. I dont have her email. How does square have her email and how do I NOT send a receipt to her email.

So that's actually not on your end! That's on Square's end, as your customer's information has been added to Square's database. I would advise your customer to go to https://profile.squareup.com/ and then go to the bottom where it says Delete Profile and then their issue should be solved!
