Creating new item no longer automatically adding Tax

Hi all, 

We have ran into a problem in the last two days where new items created for inventory do not have tax automatically added as a default. This wasn't a problem on Monday, and is now a problem on Tuesday. We've ended up in a position of having hundreds of items without tax applied because this change from applying tax as a default wasn't communicated and it's been this way for years. 

How do we fix this? I want a new item to have tax applied automatically.

is it possible that the new item that you are creating is being selected into a category that either is set up not to collect tax or has had the tax "turned off" in accidentally in that category.  I have a category for service, which is set up as non tax or no tax collected, and any items that are service items I choose this category.  It helps my reporting for reconciling sales tax.

This is before a category is selected. Just hitting create new item. All items before this week had tax automatically added. It's no longer doing that.

go under payments - go to sales taxes and make sure it did not get changed.

when you set up an item pick your category first that will help automatically set the tax

Sales taxes have not changed. 100% of my categories are taxed exactly the same.
