I create personalized items at craft shows and usually just say come back in 15 minutes. Is there a way to have customers opt in to receive an order is ready text instead?

There is an order ready text option, but I'm not sure it will work for your business.
It's based off of the Square KDS option mostly used in a food and beverage environment. With it, when you clear an order from the KDS screen and you have entered a text capable number at time of order the system will send the order ready alert.
Having a KDS screen for craft shows would be overkill though, so I don't think that will work for you. Unfortunately, the only workaround for you would be a multi-step process of adding a customer to the sale, ensuring that customer has a text capable number on their profile, and then manually sending the customer a text (provided they've opted into receiving messages from you) when your order is done.
Wish I had better news! I do recommend heading over to the Feature Requests section of this forum and submitting this request. It does make sense to have something like this available to everyone.
