I accidentally changed a status from New to In Progress when it isn't even going to be started for several weeks. Can I change it back?

At this time, there isn't a way to revert a step in the order process (ex. In progress back to new). Sorry about that.
That's a great feature request though, and one I'll definitely pass along to our Product Team.
Almost 3 years later, you still can't fix it. I may have to go find a new way to sell online....so many feature requests that never get implemented or work. Starting to get very frustrating as my business grows.
