Yes, if you keep track of your inventory through the items dashboard it will mark your item sold out when that inventory gets to zero. You will need to turn on Track Inventory for each item that you would like this to happen to.
With the updated Item format you can find it in Variations then you click on the Actions on the right of Variations and it will bring up a drop-down menu with Turn on Inventory Tracking at the bottom of the list and then enter your current stock inventory.
