What error are you getting when you try to add a new link to your navigation? There is a limit on the number of pages you can create (this does not include those which are automatically made for the store), but I don't know of a limit for what you link to you from your navigation.

Each time I attempt to add subcategory from my header it highlights the name box in red and says "an error has occurred" please try again.

Hmm, have you tried on a different browser @ImagesBeauty (preferably Google Chrome)?
