how do you create custom items for sale in the online store?

I sell jewelry that can be custom ordered to change many aspects of an item i.e. the length, the type of beads, etc.  Should I create an option, variation, or modifier to add a line to the original item? The item would need a field the customer could request the changes they are requesting. I haven't been able to find any detailed instructions on the differences between these choices and how they work.

Hi, would you need to track inventory on each individual combination?  If so, then an entry for each individual combination is needed.  If customer needs to select their bead with no cost change, then could be under Modifiers.   Length cost difference could work under Modifier settings which allow for additional cost such as S-L size is one price then $4 more for plus size.

Thanks for the article as it is informative, but it doesn't really help my situation.  I could not possibly define every possible custom order a customer could request. There are hundreds of gemstones and crystals in numerous colors plus an infinite number of sizes the customer could request. What I need is an blank option for a "custom order" that has no inventory or pricing connected to it, but could be filled in later and used by the customer to pay for their order. I have a page for custom orders where the customer can email me what they are interested in. I need a way to create an "custom order"  line item for an invoice so I can define their request and pricing individually. Do you have any suggestions on how I can accomplish this?
