Sign in to Square Dashboard and go to Items & services (or Items & menus or Items & inventory) > Items > Item library.
Select one or more items to schedule using the checkboxes.
Click Actions and choose the option you want to schedule.
Site visibility: Choose whether the item should be Visible, Hidden, or Unavailable.
Online sale price: Choose to either apply or remove the sale price update.
Set up your update and toggle on Schedule for later to enter your scheduling details.
Review your changes and click Schedule update to finish.

Not sure if I'm understanding correctly, but I followed your steps above and achieved the below – not sure if this is what you're trying to do?
In my Square Dashboard, I can still see this option in this flow:
If you’re on the free plan, you may not see the option or it may be greyed out.

Thanks! It isn't showing up for me and I'm on the paid plan so there must be a glitch in the system. Several features are not working for me recently.
I noticed in mine that the actions button in the top right was greyed out which threw me initially but when I tick items, the one in the bottom right works. If that helps?
