I need a little guidance to amend the shipping and returns wording. Any help is appreciated.

Can you give me more details as to what you're trying to do? Do you mean with the Online Store?
If so, there's a Support Center guide here on Order Management that goes over shipping and returns that should help you.
This page goes over the options you have so if it's not listed here, it may not be something you're able to do at this time.
