Setting up a new shop-- inventory problem

I started setting up a new shop for a non-profit I volunteer with-- uploaded/described 3 items for "featured" products (all one of a kind). Somehow, one of the items got "sold", even though the shop isn't even published. 

I've tried multiple times to edit/etc., but it says I need to enter a price (which it has), and won't let me update "stock". 

How can this be corrected?

Also... I need different shipping policies for this shop, than for my personal shop, but there doesn't seem to be a way to edit them just for this shop. How can this be done?

And... is there a way to show the unpublished shop to others via a link, without giving them editing, or access to my personal shop?
