When booking a recurring appointment, how do I manage the conflicts with existing appointments? The only solution I've found is to manually go through all the dates and check... kinda defeats the purpose of having a recurring option in the first place!

I reached out to our Appointments team on this one and they said because recurring appointments are set by you that anything booked by you can override any setting including another appointment.
I know this isn't the answer you're looking for and I definitely flagged it to them as a feature request to possibly change the way this works so this isn't expected behavior.
Is there a way to be notified if you are double booking when setting up a reoccurring appointment. Or notified when you book on a date you are blocked off?

ashc addresses this issue here. Looks like you don't get notified if appointments overlap one another, so you'll have to check your calendar to make sure that doesn't happen.
Another option would be to set up your appointments so that you're manually accepting or denying each one.
