I have set up items for Holiday ordering. They have a five day prep time. They all show "Available Later"

It sounds like your items are showing as “Available Later” because of the prep time you’ve set. When you assign a prep time (like 5 days), Square Online automatically calculates the earliest fulfilment date. If that timeframe pushes availability into the future, your items will display the expected date or window when the order will be ready.
I took a look at your site and found the pre-order section with your four holiday items. In testing, I was able to add one of these items to my cart using today’s date for pickup and successfully proceed to checkout. During checkout, I saw a note confirming the actual pickup date and time (five days later).
So everything is functioning as expected, your setup is correctly allowing customers to place pre-orders while reflecting the accurate fulfilment timing. 🎉
