Catalog sync isn't completing, I had noticed new items added to OpenCart weren't being copied into the Square library but assumed it was a hiccup on my end. Due to other issues, I decided to reinstall the entire storefront from fresh and encountered the same issue but was now able to pinpoint what's happening.
The catalog Sync was stopping at exactly 1000 items copied. Additional On-demand Syncs managed to get it to climb 32 items but it's plateaued there. 😅
I've found forum posts from years ago regarding a catalog limit that seems to be the same issue but no resolution was posted.
Anyone have any insight on anything I can do on my end?

I'm sorry to hear you're having issues with the sync between Square and Opencart.
Even though Square integrates with OpenCart, they are the one managing the integration entirely. I invite you to contact their Support Team directly for assistance.
