Multiple Shipping Options

I need to set up multiple shipping options, but not show all of the options on all my products. Basically some ship at a flat rate and some ship by weight.  does anyone know if this can be done and if so how?

Do you have specific examples of your products, and why they would need to ship a certain way?

Maybe another Seller has some advice for you, if you can share a bit more detail here!
