Is it possible for a customer to send us directions at time of checkout?

For simplicities sake let's say I sell whole bean coffee. Is there a way at checkout that a customer can add instructions such as grind it for me, leave it whole, grind half but leave the rest whole? I'm not talking about variations such as pounds versus ounces, I specifically mean instructions to us to customize their selection.

I add a comments text field  in variations and just have it say "Comments for Willow Sky"  

My customers then can write me anything they want to share or comments for their orders. It has helped me tremendously.

Thanks for the response. I looked around in retail and online attributes and while I see Variations in both I can only select Units. How did you add a text input field? I don't seem to have that option.

I had to go back in and find it.  I was able to go to online then go to edit item and I was able to do it under Modifiers. I put a screenshot below. So instead of a drop down selection I picked text box and then just wrote Comment for Willow Sky. Let me know if you need more information. I would be glad to help!
