I don't want to offer local delivery - only delivery by courier or post

I am playing with setting up a free account before taking the plunge to a paid service - my online site is:

I want to offer free courier delivery to a selection of countries (UK, Europe, USA mostly) 

I have set up a shipping profile as default with the countries I want and shipping price of £0.00 but my items show as 'out of stock' unless I select shipping from Fulfillment - Pickup and Delivery - and select Delivery - which wants me to enter my postcode and the number of mile/Km that I am willing to deliver (I put 10,000 miles)..
This then shows my items in stock - but on checkout the customer must enter an address before adding the item to the basket and it only accepts UK addresses...
What have I done wrong?
I don't want to offer local pickup and delivery - just free courier delivery..
I tried chat - and the customer service agent told me to unselect local delivery - how do I do that without my stuff showing as 'out of stock'..
It would be great to get this working as I want to move away from Etsy ans Square looks to be a good option, if only I can get this to work!

It sounds like there might be some confusion with the terminology between delivery and shipping, which could cause your items to appear as out of stock if they’ve been set to a specific fulfillment option. I checked your site this morning, and it looks like shipping is set up and working as intended, with no local delivery available. I was able to add an item to my cart for shipping to Ireland without any fees.
