How long do items stay in a customer's online cart? Do they expire after a certain period of time, or can they come back at any time in the future to resume shopping? Especially since we don't have the capability for customers to create accounts. (Which would be extremely helpful!)

I don't think there's a specific timeout timeframe. From personal experience I can add stuff to a cart with a Square seller and forget about it then come back and it's still there.
I think it's set to be in there for a pretty long time!
When people are shopping in your online store and add an item to their cart, how much time do they have to complete the checkout process? And is that length of time adjustable?
We had someone add an item to their cart, and processed an order for the same item (a one-of-a-kind) over the phone at the same time. The online shopper was not happy!
