Hi there @gchalm.. Right now, there is no such feature in Square Online. Trust me, there are more than a few feature requests out there, if you want to search for one and add your support to it. Also, you can submit another feature request here.
Otherwise, currently the only way to do this is to wait until you close the night before. Change the hours, then. Then set yourself a reminder to change it back the next day so that you have the correct hours for next week.
