How do I offer customers to option to customize their order?

I want my customers to be able to go in and type what they would like on their item

You can enable the ability for customers to leave a note in checkout. I would suggest that within the item description, you advise your customers to leave a note with what customization they would like. You can enable customization through Square Online > Settings > Checkout > Advanced Settings:
