Hey there @HFOFS.. So currently you have to add one item/variation, then click on the Add Item link to add the other variations. Keep in mind, though, that ONLY these variations will be added to the coupon. If you add another variation while the coupon is active, you'll have to remember to add it to the coupon, as well.
If you want to submit a feature request asking for the item to include all current and future variations, you can do so here.
