When you are creating an invoice, the currency will always default to the currency of the country where you have created your Square account. For example, if you have created a Square account as a business trading in the UK, the invoice will always be in sterling.
In this case, it sounds like you may have created a UK Square account, instead of an Irish one.
If this is not intentional and you want to create a Square account for your business in the Republic of Ireland instead, please contact our Support team directly. They will be able to assist you further.
