If I want a date or some dates to not be available for pick up or local delivery, is there away to do disable those dates in Square online e-commerce?

If I have reached my maximum number of orders I can fill for a date, can I restrict that date without affecting existing orders on that date?

You can absolutely restrict that date in your settings. The order that are already there will not be affected by this change.
