Just picked up a Square terminal to add to our collection. I have gone into the setting and toggled on Skip Receipt Screen...restarted machine...and it still keeps prompting for a receipt choice. Any helpful thoughts on how to actually get it to skip the receipt screen?

I suggest starting out with the troubleshooting steps for the Terminal listed here. Sometimes new Terminals need a software update before they start functioning correctly. I had this same problem, I came here and didn't get a solution.
I did however fix this problem by turning off the printer.
This is done by selecting:
SETTINGS -> Hardware -> Printer -> Receipts -> Use this printer for receipts ->(toggle OFF)
