One time item

I'm not sure how to configure my articles here. Feedback is much appreciated.

Context: We are a community bike shop that fixes donated bikes to sell them to finance our mission. When a bike gets in, it is inventoried with a UNIQUE ID (not in square, but our system). Once the repair has finish I would like to make it available for sale in the Square Ecosystem. Each bike (article or variable) is unique, therefore we don't stock the same item ID. Once a bike is sold it is gone.

In the article configuration, I have a category named "USED - BIKES" within that category, I have an article named "used bike" with a variable pricing and taxes (no stock follow-up). For the bike that are ready to sell, I was planning to use the UniqueID in the article name (or SKU if variable is used).

My question: should each bike be created as a unique article (within the used bike category) or should I create an article "variable".

So far I have tried to mass import the bikes that are ready using an Excel spreadsheet. Not very successfull. Some parameters are not activated when importing (stock, online availability and taxes). But that is another story.

Eager to read your input.

I would create an item for each bike, once its sold just leave it as out of stock. This way it would be easier to keep track and also tax purposes.
