hi, I use the Square online store to build my art business, and I have a company that helps me print and ship, so if I don't set up Pickup & Delivery, can I still launch my website?

You can publish your Online Store without these settings. If you decide to offer Pickup or in-house delivery at a later stage, you can set this up at any time.
