I have WP site, with the Woocommerce plugin, and Square accepts my payments. When someone buys something on my site, how do I (or is it even possible) to get automated emails sent to the customer after they've submitted an order? They buy, they get an email saying "thanks for buying!", or is it all manual?

I think this is a setting you might need to configure within your WooCommerce account. I did a quick search and found the WooCommerce Email FAQ, which looks to be providing guidance on what you're seeing.
