Why can't we create sub categories of services?

It would be nice to be able to list Categories like:

Haircut services

Waxing services

Beard services

Color Services Etc., 

This would help minimize the list and make it easier for clients to find what they are looking for.

I have been using square appointments from the beginning, And I do NOT have my booking site public, I keep the link private because I do not accept new customers.  Is there anyway to make this happen when Not published publicly?

I am confused by your term of Subcategories, since those services seem like they could be just Categories.

Now if you had- 

Category

1. Haircut   (Parent Category)
   1. Standard hair cut  (Sub -Category)
      1. Cutting of split ends (Service)
      2. Shortening 1/2 inch off etc (Service)
      3. (Service) etc
   2. Haircut with Shampoo (Sub -Category)
   3. Custom Design Cuts (Sub -Category)
   4. etc... (Sub -Category)
2. Coloring Service (Parent Category)
   1. Single Colors (Sub -Category)
   2. Highlighting (Sub -Category)
   3. etc.. (Sub -Category)

Those would be more where you would use the Sub Categories over just Categories.

Maybe if you had a Screen shot of what your trying to accomplish, other sellers might give you ideas.  This might also give a clearer explanation of your question.  

Now if you know how to Add categories, to add a Sub Category you create a Category, and about halfway down on a web browser there is a spot that says Parent Category.   So lets say in my example above You wanted Highlighting to be a Sub Category of Coloring.   You make a Category of Highlighting, then before saving or even after saving you can edit that category and make it have a Parent Category of Coloring.  

The way I was reading your initial question was that, these are all Parent Categories which would have the service under them:

Haircut services

Waxing services

Beard services

Color Services Etc.,
