While this feature is not available with Square Appointments at the moment, you're able to use Invoices as a payment method to check out an existing appointment on the Appointments app.
I understand this might not suit what you're trying to achieve, but it might be worth checking it out. You can find more information about the Appointments app on iOS and Android on our Support Center.
In the meantime, I would also suggest filing a feature request on Ideate.
