I know there is 3 options for Payments & Cancellations on Appointments. I have some clients that want to prepay online and some that don't. Is there a way that the client can Prepay if they want to but not make it a Require Prepayment?

At the moment, the Payments & Cancellations setting applied to all appointments. There isn't a way to make the pre-payment optional. I'll definitely share this with our Appointment team as a feature request!
If the customers would rather pay in-person rather than upfront online, a workaround would be for them to contact you directly. You can manually create an appointment for them from your Square Appointments app or your Square Dashboard, and that'll skip the prepayment.
