I run a gaming business and I’d like to be able to schedule game sessions at specified times  and with a limited amount of slots available per times. 
for example, I’d like to offer gaming sessions at 1pm, 2:30pm, etc, with only 12 slots available per gaming session. 
with this I’d like to clients to be able to schedule their time slot and select how many slots they’d like to book per session. 
has anyone been able to use or apply appointments for instances such as these?

We just had an event last week where we needed to do something similar. We found the best way to do it was by using Square Online, creating an Event, making the time slots using Variations, and setting the Quantity available for each time slot.

We book parties starting every 2 hours at my center.  I set the services up to have a 1hour, 55 minute duration.  I then set availability for my staff to recur every day from 8:00am-9:55am, 10:00am-11:55am, 12:00pm-1:55pm, etc.  It forces clients to book appointments at those specific start times.
