An employee entered sales as a "custom amount" but I need to assign inventory to those custom amounts now. How do I do this?

You won't be able to edit a sale once it's completed. These sales won't be connected to an items or inventory, but you can adjust your inventory on your Square Dashboard to account for the sales.
