There should be a way to set a maximum charge amount. I own a small business and want to prevent my employees from making an error and overcharging. Which would result in a refund. Which SQUARE will then profit from

Square's max charge amount is $50,000 per individual transaction. I don't believe there is an option that allows you to set a lower limit for any particular individual item other than inventory controls but, that may not help for the total amount of the transaction. Perhaps some other community members have a work around for what what you have in mind. Or maybe this should be a Feature Request submission which can be done here.

Can you explain your process for charging a customer? What type of Square Hardware are you using? Are you using a cell phone, Tablet and just entering the amount manually?
Square does not have a way for you to Manually set a maximum for a credit card charge of $25.00 for example, just the Maximum of $50,000 per single transaction and I forget if they have a Daily fixed amount?
The reasons I ask how you enter prices, is when we first started we had the older Cash Register system. We would ring everything up on the cash register, and if they wanted to pay by CC would would enter the total amount on a Tablet to process the amount. This worked ok, since every transaction would show on Square as a Custom amount, this did not help for inventory. The other issue was sometimes while entering the $ amount, we would enter $50.00 when the total should have been $5.00 for example. The only way I found to do this with Square, was I went and bought the Square Stands and a Scanner to put everything in Squares Catalog. This way my employees just scan the items and the price appears... no sticky fingers accidentally adding a zero or two. You could also have everything entered in Squares Catalog and have your employees select the item to add it to the cart for payment. You can try this with the current app you are using. So no scanner would be needed. This is ok if you do not have a bunch of items you sell. Otherwise you might be taking time searching your catalog for the Blue Pen you are selling for example. Now if you only sell 1 type of blue Pen you can type in Blue Pen in the search in Square and it will find your Items with Blue Pen in the Item name and you select the correct one. Typing on cell phones or tablets can be time consuming too. Now to save costs you could get a Stand for about $150 and use an Ipad that has WiFi only if your store has Wifi in it to connect to the internet. You can also get used or refurbished Ipads or Scanners to keep costs lower till you want to upgrade to see if this would be a viable solution.
