The title of this post has been edited from the original: ["customize service time between employees","customize service time between employees"]
I use Square appointments for my barbershop and would like to know if I can customize the service time for each individual barber. Some need 45 mins to finish a haircut, and others need an hour.

Hi there @TheStandard (and welcome to the Community 👋) - while it isn't possible to customize the length of a single service to vary based on the staff member performing the service, I can think of a way to accomplish this!
If your staff members need to offer services with different service lengths, you'll want to head to your Service Library to create new services with varying durations. Once you have multiple Haircut services with varying service durations, you can head over to edit your staff members' offered services.
You have the option of customizing which services a certain staff member can offer when creating/editing their staff profile in the Staff section of your Appointments page within your Square Dashboard. Click on the staff member you'd like to edit, then scroll down until you see the ONLINE BOOKING section:
Once here, you'll select the service you created with the appropriate duration for the staff member you are editing. Let me know if questions come up!

So does this mean if a client is unsure who to book an appointment with, they would have to click the multiple “haircut” options to find the opening that works best with their schedule?
let’s say they select haircut (a) that is set for 30 min, and see the barber has 0 openings, they would then have to go back to the service screen and select haircut (b) which is set for 45 mins and then see that time is available with a different barber
with Multiple barbers, this seems like way to much work on the customers end. If you had to select staff first, I could see this working however it has you select the service first. Am I missing something or misunderstanding?

This is fundamental. There should be a variation which blocks more time when a certain team member is chosen. Having 2 different haircut options excludes the 1 person who needs the extra time or excludes every one else. We got by by giving each team member their own set of services but now we have scaled and that would be too convoluted when booking. Also, we want new clients to be able to choose new team members equally. Just too many problems when you could add a time variation on a service per team member.

Valentina, thank you for this work around, but at this time is there any other option? We would love to not have 200 different services. We currently have to go and alter every appointment to add extra time for our jr techs. We would also like for the service amount & service duration time to be different for our different service providers. We have jr techs, average techs, and master techs. Everyone should be on a different service pricing structure that client's pay, and the time they take to complete the service is also different. It would be nice to have the price and time reflect at booking/email notifications without extra communication and or manually changing every appt in the book. We see ~500 clients a month with a team of 10 techs + growing.
