How to set up to remove inventory by unit ?

Trying to make a move to Square from Shopify and currently testing Square. 

We need to keep track of inventory by the inch.  I have inches set as the unit, the option and variation but when something is sold it deducts 1 item instead of the number of inches.  Example - Inventory is 100 inches - item sold is 10 inches = new inventory of 90 inches.  

How to set this up?

I should add the price is per item, not per inch

You do have the option to create or sell your items by inches & using decimal quantities.
