Hey there @jjudd21775  So, there are two different settings you need to check out in order to define this for yourself.

 

First, from your web dashboard main menu, go to Staff & Payroll > Team > Settings > Schedule.  There you will see a setting where you define your Start of workweek.

 

Second, if you also use Square Payroll, go to Staff & Payroll > Team > Payroll > Pay Schedule.  Here you will both a “Pay Period” as well as a “Pay period ends on” settings that are used for importing time sheets and optionally tips into regular payroll runs.
