Custom commission individual item

I would like to set a different commission rate on a category of items. For example, my employees make 40% on services, and also 40% on retail product sales (items). BUT I would like their commission to be lower on hot tools, (which would be a category of items) so that I don’t have to mark them up so high. Can I not do this?
